Opened in late 2015, Elmer is making a name for itself as the Chic neo-bistro of the moment. At its helm chef Simon Horwitz, a young chef in his early thirties, but don’t let the age fool you, with a solid CV (ex Sylvestre Wahid, ex Pierre Gagnaire), you are in for a surprise or two.
In addition, an open kitchen with a dining area that transcends all the elements of this kind of establishment: modern, chic, minimalist and warm. The opening of David Toutain in 2013, was clearly anticipated, due to the reputation of a prodigy he cultivated at the kitchen of Agapé Substance. Located in les environs of champs de mars, one might expect a touch of “snobisme”, on the contrary the minimal design & earthly colors set off a casual and unpretentious impression. After his departure from Le Meurice (ex Alain Ducasse), Christophe Saintagne opened his own restaurant “Papillon” in the 17th arrondissement. Discreet yet elegant, minimalist yet warm, seated on white wooden chairs, or camel leather banquets, the plates are delicately and beautify presented.
A sophisticated simplicity is seen in the juxtaposition of ingredients, an appetizer of eggs, black truffles & bacon, a parboiled Pollack with leeks & capers or black pork of Bigorre with the oysters from Utah Beach. A three stars quality, at prices of a modern bistro.
